Plantain and Beans Stew

This meal is also known as red-red in Ghana which is enjoyed by many all over the continent. This is an all vegetarian meal which is palm oil based stew served with fried plantain hence the name “Red-Red”. Let’s get started with some fun stuff, this meal is very easy to make and I assure you will enjoy the process.

Beans Stew ingredient:

  • 4 medium tomatoes (Sliced)
  • 1 large onion (chopped)
  • 2 clove of garlic
  • ½ cup red palm oil
  • 2 chilies (optional)
  • Salt
  • Shrimp / Chicken Stock cube
  • 2  teaspoon of ground ginger
  • 2 cups of Black-eyed peas
  • Water 5 cups
  • 2 tbsp. tomatoes paste

Part 1

Wash and soak beans in room temperature water for 1-2 hours. In a large pot boil beans in 4.5cups of water with about 2 tsp. of salt. Partially close the cooking pot with a lid. After boiling the beans on high heat for about 5mins reduce to low and boil for about 45 mins- 1 hr. until soft. If more water is needed during the boil, add only boiling water to it. When the beans is cooked, drain  in a colander and set aside to cool.


In a blender  put onions, tomatoes, garlic, chilies, ginger and a half cup of water, blend till it becomes a thick liquid. In a separate pot heat up palm oil then put in about 2 tbsp. of tomato paste stir until paste is well distributed, and pour the blended mixture into the pan and stir. Place lid on the pot partially, make sure you check frequently and stir on low heat. In about 45min-1hr the stew should turn deep red with a little palm oil on the surface. Add stock cubes, 2 tbsp. of salt, stir stew to distribute the seasoning. Add cooked beans to the stew and stir, allow to simmer for about 5mins then taste for salt, if it needs more add a little more salt stir and turn off the stove after a minute.


Prep time: 20- 25mins

  • 4 very ripe plantains
  • 2 cup Vegetable oil (for deep frying)
  • ½ tbsp. salt and/or pepper

Peel and slice plantains into about 1-inch chunks, Heat up oil on medium in a large frying pan, place plantains in the hot oil turn occasionally fry both sides for about 4-8 mins per sides until partially yellowish brown. Remove and place in a colander/ in a plate with some paper towel.
